THE PRODUCTION PROCESS
Once the grapes have reached a sugar content that allows them to produce approximately 11% alcohol and a pH of 2.9/3.0, they are harvested by hand and stored in a cold store for approximately one night. They are then soft-pressed whole in an inert gas atmosphere for about 30 minutes at a maximum pressure of 0.8 bar. The result is a pale pink flower must. It is then aged on its lees for about four months and stirred frequently. At this point, cold decantation takes place, which means letting the mass reach a temperature of 0-4 degrees centigrade by transferring the free run must into tanks situated outside the cellar to take advantage of the naturally low winter temperatures.
After being left to chill, the wine is racked and stored in a steel tank for another month. It then undergoes a second fermentation on its lees in an autoclave for about two months, after which it is filtered and bottled.
FOOD PAIRING
It is the ideal wine for aperitifs. Due to its organoleptic qualities conferred by the Sangiovese grapes from which it is produced, it goes perfectly with Cinta Senese cured meats, seafood and shellfish in general. It can be enjoyed with any meal, but we recommend the combination of pizza and bubbly.
